Call it a comeback. Once relegated to camping and steak rubs, instant coffee is seeing a resurgence, led by a brand-new craze: Dalgona, or whipped coffee.

If whipped coffee sounds familiar, dalgona coffee likely won’t. In fact, both are likely brand new on your radar because the drink itself is brand new to the world. The name is derived from a toffee-and-sugar flavored South Korean candy of the same name. Dalgona coffee originates in South Korea, hence it’s second alias: Korean coffee.

But, as I mentioned, the whipped coffee craze ascended to fame only recently. Like, really, really, really recently. Like, so recently it should be called COVID coffee instead of Korean coffee. That’s right, whipped coffee is a product of quarantine and a darling of social media. [1] At least until the next trend comes along.

But you live in the moment, right!? Here’s how to get your whipped-coffee kick—and some likes while you’re at it.

What Is Dalgona (Whipped Coffee)?

Dalgona coffee is an even blend of instant coffee, sugar, and water. The thick, creamy foam is then spooned over your milk of choice. It’s delicious hot or cold, and is far easier to make than its fancy appearance would have you believe.

And truly, Korean coffee looks enticing! The melange creates a butterscotch hue that’s at once peculiar, drool-worthy, and immediately recognizable on Instagram and TikTok. But semblance to dalgona—the candy—comes from more than just Korean coffee’s appearance: the taste is similar, too. And though dalgona is now more of a retro candy in its homeland, if you’ve ever had it, you’ll certainly be excited for its sipable better half.

How To Make Healthy Dalgona Coffee

All this sugar-toffee-candy talk sounds great to your taste buds, but your body might think otherwise. Relax, body. Healthy dalgona coffee is definitely a thing. This recipe gets creative with ingredients, and actually steps this simple delight up a notch or two in health, taste, and quality.

Firstly, you’ll use 1/2 tablespoon less sugar than typical Korean coffee. A 10-calorie nudge towards healthier—but, hey, that still counts!

Then we add a tablespoon of peanut butter. This thickens the mixture and adds a wonderfully rich taste and health benefits. Peanut butter is a good source of fiber and plant-based protein. And though it’s got about 8g of fat per tablespoon, the majority of that are mono- and polyunsaturated fats, which help lower LDL, the bad cholesterol. [2] And then the health benefits jump through the roof with a scoop of ultra-low-calorie Super Youth unflavored collagen. Collagen peptides offer a breadth of youth-preserving health benefits. Depending on the type and source, collagen can help reduce joint pain, strengthen tendons, reduce wrinkles, and soothe digestion. [3, 4, 5] But not just a little. The age-defying effects of collagen can be significant. Super Youth collagen contains five types of collagen from four premium sources, affording you all the above benefits with just one scoop. You’ll never notice it in your coffee, but you’ll definitely notice it in your body.

How To Make Whipped Coffee

Even though it looks fancy, making Dalgona Whipped Coffee is easy.

Whip instant coffee, sugar, peanut butter, and hot water in a mixing bowl for about 20 seconds. Get the water hot but not boiling, so you don’t burn the grounds. Speaking of, I recommend reaching for some gourmet instant coffee. Yeah, it’s a thing.

Then, pour your milk at your preferred temperature into a glass and add one scoop of revitalizing Super Youth collagen, and mix. Add ice, if you’re drinking it chilled. Then gently top with the whipped coffee. Post to your social media and enjoy.
