As May starts to roll around and the sun seems to shine a little brighter, my summer senses start to tingle along with the exciting anticipation of Cinco de Mayo! And what better way to celebrate this holiday than with a new, delicious recipe!
One of my all-time favorites is Mexican street corn salad, or esquites. But street corn salad recipes such as this one isn’t just an amazing side dish to make for Cinco de Mayo, it’s a refreshing, flavorful dish that compliments any summertime meal.

Mexican Street Corn Salad
- 4 cups corn (approximately 24oz frozen or fresh)
- 1 tbsp olive oil
- 1 red pepper, diced
- 1 bunch fresh cilantro, minced
- 1 jalapeno, diced
- ⅓ cup red onion, diced
- ⅔ cup cotija cheese, crumbled
- 2 tbsp sour cream
- 3 tbsp plain greek yogurt
- 4 tbsp fresh lime juice
- ½ tsp cumin
- ½ tsp paprika
- ¼ tsp salt
- ¼ tsp chili powder
- 1 scoop Super Youth Collagen, unflavored
- Heat olive oil in a pan on medium high and add corn. Cook until slightly charred, approximately 7-10 minutes. Add to a large bowl, set aside.
- Add pepper, jalapeno, cilantro, and onion to a large bowl with corn and mix well.
- In a small bowl, add all dressing ingredients and mix well until smooth.
- Add dressing to a large bowl with corn and mix well. Add 1/2 cotija cheese and mix well.
- Add remaining cheese and some cilantro on top.
- Serve or cover and store in the fridge before serving.
