What Are Cake Pops?

Cake pops are a fun, simple dessert made of crumbled cake mix combined with frosting. They vary depending on flavor, and can either be served as a truffle or on stick, hence the “pop”. For red velvet cake pops the frosting is replaced with cream cheese, to give it that traditional, tangy red velvet experience. They’re similar to red velvet truffles, but they taste more cake-like than mousse-like.

How To Make Red Velvet Cake Balls

The exciting and decadent name red velvet cake pops sounds like an intimidating recipe, but it’s actually not too complicated! You’ll start by making a boxed red velvet cake mix. This is your base for the red velvet cake balls. Once you have the cake made and cooled, it’s all about assembling. Which, to me, is the fun part!

First, crumble the cooled red velvet cake in a large mixing bowl, then add half of the cream cheese. Continue to add cream cheese, as needed, until the mix easily molds together. Once combined, scoop out balls of cake mix, with a cookie scoop or by hand, and place on a parchment lined tray. Freeze for 30 minutes.

While you wait for the red velvet cake balls to harden, make the white chocolate coating. Melt the chocolate wafers in a microwave safe bowl in 30 second increments until completely melted. Add in one scoop of Super Youth collagen and mix until combined. 

Once the red velvet cake balls are ready, quickly dip the balls into the white chocolate. Place them back on the tray and let them cool and harden. While they cool, melt the red candy melts according to the package instructions, then pour into a plastic bag. Cut a small, pin-sized hole in one corner of the plastic bag and gently drizzle it over the truffles. Add sprinkles, then let harden. You can also flash freeze them for about 5-10 minutes. Red Velvet Cake Pops

 

Ingredients

 
  • 1 box of red velvet cake mix, cooked to package directions
  • 1 (16oz) container of cream cheese frosting
  • 1 ½ bags of white chocolate melting wafers
  • 1 scoop Super Youth collagen, unflavored
  • 1 cup red candy melts
  • Valentine’s sprinkles
 

Directions

 
  1. Prepare a large baking tray or cutting board with parchment paper and set aside.
  2. In a large bowl, crumble the cooled cake mixture until crumbled. Mix the crumbled cake with half of the cream cheese frosting (add more as needed to get a mix that can easily stick together).
  3. Using your hands or a cookie scoop, form 1 ½ inch balls from the cake mix. Place them all evenly on the baking tray. Freeze for 30 minutes and in the meantime melt the white chocolate in 30 second increments, stirring each time until it has melted completely.
  4. Mix one scoop of Super Youth collagen with the melted chocolate.
  5. Remove the baking sheet from the freezer and work quickly, dip the balls into the white chocolate, drain and set them back down on the tray and let them cool and harden. (You may need to melt the chocolate again halfway through as it starts to thicken up.
  6. Melt the red candy melts according to the instructions on the package, add it to a plastic bag and cut a pin-size hole in the bottom. Lightly drizzle it over the truffles and add sprinkles. Let the red drizzle harden up then serve.
